Watercress Open Sandwich with Coconut
As usual Saturday lunch was a a bit of a forage in the fridge. I sliced a couple of very thin slices of sourdough bread and spread them with lighter than light Helmann’s mayo, then piled up a mixture of watercress and baby salad leaves. Some slices of red pepper and tomatoes topped it off.
Then I remembered that Jac at Tinned Tomatoes
was looking for soups or salads that featured coconut for No Croutons Required, so I sprinkled a little dessicated coconut on top. This is almost as bad as the ‘Tart’ cake that Dom from Belleau Kitchen
entered for Alphabakes
, but if he can get away with it, I’m sure I can!
