Hot Cross Bun Waffles have all the flavours of Easter Hot Cross Buns in a delicious breakfast waffle. These waffles are crisp on the outside, giving way to a soft cinnamon and mixed spice flavoured centre. Add your favourite toppings and serve all year round.
Why should I make Hot Cross Bun Waffles?
If you love to make waffles then this seasonal flavour variation is a great way to celebrate Spring. They taste a little bit like cinnamon buns and you can even make them ahead which makes them perfect for a brunch party.
What ingredients do I need to make Hot Cross Bun Waffles?
Making waffles is really simple, the basic ingredients are similar to those you would use for muffins or pancakes and you probably have them in your larder and fridge. Here’s what you need:
- Flour
- Sugar
- Butter
- Eggs
- Cinnamon
- Mixed Spice
- Orange zest
- Lemon zest
What kind of flour do I need?
I use self-raising flour but you can use plain (all-purpose) flour and add a raising agent.
What kind of sugar do I need?
I use caster sugar (superfine) because the small grains dissolve more easily with no risk of any gritty bits of sugar remaining. You can use granulated sugar but do make sure it has all dissolved in the milk before adding to the dry ingredients.
What is mixed spice?
Mixed spice is a mix of ground cinnamon, coriander seed, caraway, nutmeg, ginger, cloves, allspice, and mace. And you will find it with the other ground spices in your supermarket or baking supplier.
What is zest?
The Hot Cross Bun Waffles contain both orange and lemon zest. The zest contains concentrated oils that provide a fabulous fresh citrus taste to your waffles.
The zest of citrus fruit is the coloured part on the outside of the fruit. Use a fine Microplane grater to take only the coloured part from the orange and lemon because the white pith that sits underneath is bitter.
What can I substitute for the raisins?
I add chopped raisins to the waffle batter because Hot Cross Buns usually contain raisins. However, if you don’t like raisins you can leave them out.
Many commercial Hot Cross Buns now come in different flavours. Use dried apple, caramel pieces and chocolate chips instead of raisins. I haven’t tried these in the waffles myself but I think they will be delicious. Definitely worth trying.
How do I make waffles?
Follow the instructions for your waffle maker. Mine is really simple, I simply pour 125ml of the mixture onto the preheated waffle iron and lower the lid. My waffle maker has a light to tell me when the waffle is cooked and ready to remove.
Keep the waffles warm on a plate in the oven on low heat, make more waffles until you have used all the mixture.
Can I make Hot Cross Bun Waffles ahead of time?
Yes, you can make the waffles, let them cool on a cooling tray and store in an airtight container. Refresh the waffles in the toaster, under the grill (broiler) or in the oven. Be careful not to burn them, they only need a few minutes to heat through.
Can I freeze waffles?
Cool the waffles as above, then lay them out in a single layer on a baking tray and open freeze. When you are ready to serve, pop them under the grill (broiler) or into a pop-up toaster to defrost and warm through.
Vegetarian
Hot Cross Bun Waffles are suitable for vegetarians.
Gluten Free
Waffles contain wheat flour and are therefore not suitable for a GF diet. Use this GF Belgian Waffle recipe from Gluten Free Alchemist as a base and add the spices and raisins to create your GF Hot Cross Bun Waffles.
How should I serve Hot Cross Bun Waffles?
Hot Cross Bun Waffles come with their own built-in cross made by the waffle iron. Serve the waffles for breakfast or brunch with fresh fruit, fruit compote and because it’s Easter I would recommend serving with chocolate sauce.
Make the waffles look exactly like Hot Cross Buns by adding a cross with melted white chocolate. Hot Cross Bun Waffles also make a great dessert, serve with a scoop of vanilla ice cream.

Hot Cross Bun Waffles
Ingredients
- 295 grams (2.3 cups) self raising flour
- 55 grams (2 oz) caster superfine sugar
- 1/2 (0.5) lemon zest
- 1/2 (0.5) orange zest
- 1 teaspoon (1 teaspoon) mixed spice
- 1 teaspoon (1 teaspoon) cinnamon
- 50 grams (2 oz) raisins roughly chopped
- 125 grams (4.5 oz) butter melted and cooled slightly
- 1 teaspoon (1 teaspoon) vanilla extract
- 3 (3) eggs
- 430 millilitres (2 cups) milk
Instructions
- 295 grams self raising flour, 55 grams caster, 1/2 lemon, 1/2 orange, 1 teaspoon mixed spice, 1 teaspoon cinnamon, 50 grams raisins roughly choppedWhisk the dry ingredients together in a medium bowl, add the chopped raisins.
- 125 grams butter, 1 teaspoon vanilla extract, 430 millilitres milkWhisk the milk, eggs and vanilla together in another bowl.
- Make a well in the centre of the dry ingredients and pour in the milk mixture and the melted butter and lightly whisk the ingredients until combined. Do not over mix, it should still be slightly lumpy.
- Let the batter rest while pre-heating the waffle maker.
- Turn the POWER/DARKNESS control dial to your desired setting, I used setting 5. Wait until the READY light illuminates.,
- Pour approximately 125 ml (I found a 1/2 cup measure was about right) of batter evenly onto the centre of the waffle plate and close the lid.
- At the end of the cooking cycle, open the lid and carefully remove your waffle.
- Repeat with the remaining batter.
- Make a cross in the waffle indentations using melted chocolate or chocolate syrup and add the toppings of your choice.
