What is Brownie Butter?
Brownie Butter Is the chocolate equivalent of cookie butter. Cookie butter is a sweet spread made with speculoos cookies, known under the Belgian brand name of Biscoff. Brownie Butter is made in a similar way but with brownies instead of cookies.
Brownie Butter is also similar in texture and spreadability to the ubiquitous chocolate and hazelnut spread, Nutella. However, my Brownie Butter recipe contains no nuts it’s all chocolate brownie.

What kind of brownies do I need?
You can use any brownies, however this recipe is the perfect way to repurpose brownies that are a little bit dry. The ones that got left in the cake tin a bit longer than they should. Alternatively, buy brownie bites from the supermarket. They are perfectly delicious but are baked firm rather than squishy.
Can I make my own brownies?

What does the water do in the recipe?
You need warm water to make the Brownie Butter, it helps to loosen up the processed brownies making them into a paste.
What kind of butter should I use?
Use any butter you have in your fridge but it should be soft and at room temperature. I usually have salted butter but unsalted will work just as well. The butter adds a beautiful silky texture to the spread.
What can I substitute for butter in Brownie Butter (Chocolate Spread)?
Although I prefer to use butter for flavour, you can use a full fat plant-based spread, vegetable oil or coconut oil to get the same effect as including butter.

You will need:
- Food Processor

I don’t have a food processor, what else can I use?
A food processor makes this recipe super quick and easy. However, you could also use a blender or even a grater to make your crumbs. If you are making the butter by hand then it will be more work to beat the ingredients with a wooden spoon in a bowl but it is possible.
My brownies have formed a ball in the food processor, what can I do?
Don’t worry! This just means that your brownies have a bit more moisture in them. Simply carry on with the steps in the recipe and the Brownie Butter will come together into a smooth spread.
Can I make a larger quantity?
It depends on the size of your food processor. I can double the recipe and my food processor can cope with the quantity but any more and I recommend you make Brownie Butter it in batches.
How should I store the Brownie Butter?
You can keep the Brownie Butter in a covered serving dish at room temperature for up to 3 hours. Any longer and I suggest that you put it in the refrigerator.
However, do take the Brownie Butter out of the fridge at least 1 hour before serving. It firms up in the fridge just like butter does, so you need to take it out so that it returns to a soft spread.
How long can I keep the Brownie Butter in the fridge?
You can keep Brownie Butter in the fridge for up to two weeks. Keep it in a clean air tight container until you want to use it, then remember to bring it to room temperature before spreading or dipping.
Can I freeze Brownie Butter (Chocolate Spread)?
You can freeze Brownie Butter, just pack it into a lidded freezer proof container, label and freeze for up to 3 months. Defrost the spread in the fridge, then remove it from the fridge and bring to room temperature and give it a good stir before serving.
Vegetarian
Brownie Butter (Chocolate Spread) contains no meat products and is suitable for vegetarians.
Gluten Free
Use gluten free brownies (check the ingredients) and make as per the recipe.

There are so many ways you serve this Brownie Butter, here are some ideas:
- Serve the Brownie Butter as a dip for fruit and cookies such as shortbread or sponge fingers. I like to serve fruit such as strawberries, oranges and apple slices which I dip into lemon juice so they don’t discolour.
- Brownie Butter is ideal to serve with a stack of warm Scotch pancakes, crepes, or waffles for a special breakfast or brunch.
- Gently warm the Brownie Butter and serve over vanilla ice cream for an easy dessert.
- Garnish the Brownie Butter with crushed mini eggs and serve with Hot Cross Bun French Toast for a special Easter treat.

Brownie Butter (Chocolate Spread)
Equipment
- 1 Food Processor
- 1 weighing scales
- 1 measuring jug or measuring spoons
- 1 spatula
- 1 small bowl for finished Brownie Butter
Ingredients
- 200 g brownies
- 30 ml warm water
- 35 g butter softened
Instructions
- Place 200 g (7 oz) brownies into a food processor.
- Process the brownies. If they are dry you will get crumbs and if they have some moisture then the brownie crumbs will clump together in a ball.
- Add 30 ml (2 tbsp) of warm water to the food processor.
- Process the brownies and water to a paste.
- Add 25 g of softened butter to the food processor.
- Process the butter with the brownies until smooth and glossy.
- Use the spatula to get all the Brownie Butter out of the food processor and pile up in a bowl. Place the bowl on a plate and surround with fruit and cookies for dipping. Or serve on bread, pancakes or croissants for breakfast.
