What ingredients do I need to make Sun Dried Tomato Dip?
You only need two ingredients to make this dip:
- Sun Dried Tomatoes
- Cream Cheese
A full list of the ingredients and the required quantities is found in the recipe card at the end of this article.
What kind of Sun Dried Tomatoes should I use?
You will need the kind of sun dried tomatoes that are preserved in oil. They are sweet, soft and easy to blend.
Can I use dehydrated sun dried tomatoes?
If you only have dehydrated tomatoes then you will need to rehydrate them before using. Soak the tomatoes in olive oil for 20-30 minutes until they are soft and plump.
Can I use sun blush tomatoes?
Sunblush tomatoes are semi-dried and usually kept in oil and sold at deli counters. They don’t keep for as long as sun dried tomatoes. However, they will work in this recipe as a substitute for sun dried tomatoes in oil.
Can I make my own Sun Dried Tomatoes?
I make my own Air Fryer Sun Dried Tomatoes and it’s very easy to do. I started to do this because I had so many cherry tomatoes from my greenhouse.
My freezer is already full of tomato passata and Courgette and Tomato Soup. And my cupboards are loaded with Tomato Chilli Jam and Simple Tomato Chutney so I was looking for another way to preserve tomatoes.
What kind of cream cheese should I use in the dip?
This dip works best with full-fat cream cheese. It combines perfectly with the tomatoes and the richness of the cream cheese contrasts well with the tangy tomatoes. I use plain unflavoured cream cheese in this dip so that the flavour of the sun dried tomatoes is not overpowered by other flavours.
What equipment do I need to make Sun Dried Tomato Dip?
You don’t need very much equipment to make this Sun Dried Tomato Dip. However, a small food processor or personal blender (smoothie maker) is the most important thing you will need. Other than that a spoon and a spatula to get all of the dip out of the blender.
Can I make the dip without a blender?
You can make this dip without a blender it’s a bit more work but it is possible. Use a sharp knife and chop up the sun dried tomatoes into tiny pieces, then beat it into the cream cheese with a wooden spoon.
Can I add other flavourings to the Sun Dried Tomato Dip?
You can certainly add other flavours to the dip, it’s entirely up to you and the tastes you enjoy. Here are some ideas for additional flavouring:
- A few drops of hot sauce, or to taste.
- If you don’t have hot sauce add a pinch of chilli flakes.
- Try adding a teaspoon of red (tomato) pesto instead of the additional oil from the tomatoes.
- If you like garlic, then a little crushed garlic is nice in this dip. Keep the quantity small, 1/4 teaspoon, or it will overpower the other flavours.
- Basil is the classic pairing for tomatoes, however, adding basil to the dip will change the colour to a murky brown. So I suggest that if you want basil flavour in your Sun Dried Tomato Dip then substitute basil oil for the oil from the tomatoes.
Can I make Sun Dried Tomato Dip ahead of time?
You can make this dip the day before you want to serve it. Store it in a sealed container in the fridge or cover the serving bowl with plastic wrap or other means of covering the bowl.
Can I freeze this dip?
I don’t recommend that you freeze this dip. Although cream cheese will freeze and thaw, the texture tends to go a bit grainy. The oil in the tomatoes is also likely to separate from the cheese when the dip defrosts.
This recipe is so quick to make that there isn’t a lot to gain from freezing it. The quantity this recipe makes is not too large so it’s unlikely that there will be any left over.
Can I increase the quantities?
You can double, treble or even quadruple the quantities. However, it’s probably best to make the dip in batches of no more than double quantities so that the tomatoes are fully chopped and mixed with the cream cheese.
