Ingredients
150gramssalted buttersoftened
50gramswild garlic leaves (ransoms)
Instructions
Wash the wild garlic leaves and dry off on paper towels or a clean tea towel.
Finely chop the wild garlic.
Put the softened butter into a bowl and beat with a wooden spoon or an electric mixer until it is whipped and very soft.
Put the wild garlic into the bowl with the butter and stir with a spatula to combine.
Keep mixing until the wild garlic is well blended with the butter.
Place the wild garlic butter onto a piece of parchment paper.
Roll into a cylinder and twist the ends of the parchment paper. Place in the fridge to firm up for a least an hour.
When the butter is firm, slice as much as you need and replace in the fridge.
Use the garlic butter to make Garlic Bread, or add a slice to steak, salmon fillets or prawns to add a delicious mild garlic flavour.
